This super easy banana muffin recipe will make your house smell amazing, use up those over- ripe bananas and make your family squeal with delight...and also have some left overs for lunch or breakfast the next day!

Ingredients
3 cups All Purpose Flour
2 tsp Baking Soda
1 tsp salt
2 tsp cinnamon
5-6 over ripe (aka brown or black) bananas (i use my previously frozen & thawed bananas)
1½ cups brown sugar
2 eggs
¾ cup oil of your choice (I like melted coconut oil!)
2 tsp vanilla
1 cup old fashioned oatmeal
Instructions
Pre-heat oven to 350 degrees
Prepare muffin tins with paper baking cups or use awesome
silicone baking cups
like these or a
silicone muffin pan
Mix all dry ingredients in
large bowl
Add wet ingredients and mix well
Fill muffin tins ⅔ full
Bake for 15-20 minutes or till lightly browned. Do not over bake!
