This super easy banana muffin recipe will make your house smell amazing, use up those over- ripe bananas and make your family squeal with delight...and also have some left overs for lunch or breakfast the next day!

Ingredients
  • 3 cups All Purpose Flour
  • 2 tsp Baking Soda
  • 1 tsp salt
  • 2 tsp cinnamon
  • 5-6 over ripe (aka brown or black) bananas (i use my previously frozen & thawed bananas)
  • 1½ cups brown sugar
  • 2 eggs
  • ¾ cup oil of your choice (I like melted coconut oil!)
  • 2 tsp vanilla
  • 1 cup old fashioned oatmeal
Instructions
  1. Pre-heat oven to 350 degrees
  2. Prepare muffin tins with paper baking cups or use awesome
  3. silicone baking cups
  4. like these or a
  5. silicone muffin pan
  6. Mix all dry ingredients in
  7. large bowl
  8. Add wet ingredients and mix well
  9. Fill muffin tins ⅔ full
  10. Bake for 15-20 minutes or till lightly browned. Do not over bake!
