The thing I love about this recipe is that my kids think this tastes just like spaghetti! They are pretty picky eaters and they ate this for dinner and were looking for more! When the Pasta Sauce is on the veggie noodles with cheese and sausage, it gives you the same burst of amazingly fresh Italian flavors as spaghetti does, with extra nutrition from the veggies! Another reason I love this pasta sauce is because it is made with 100% Olive Oil and no added sugar or artificial flavors but all of the punch of a slow cooked marinara sauce: onions, garlic & tomatoes power pack each bite with flavor! You don’t even need to tell anyone that you didn’t slave over the stove all day cooking your sauce and no one will know.
How to make Zoodles:
All you need to make your own quick zoodles (zucchini noodles) is a veggie spiralizer or a regular potato peeler. All you need to do is make long noodle like strips of zucchini or squash and you have zoodles! Very easy to make!!
Zoodles with Sausage & Mushrooms Recipe
Ingredients:
3 tbsp Olive Oil
1 Italian Smoked Sausage
1 cup Sliced Mushrooms
4-6 cups of Zucchini or Yellow Squash Noodles ( I used a mix of both)
1 jar New RAGÚ® Simply Chunky Marinara Pasta Sauce
Garnish (optional )
Parmesan cheese
Basil leaves chopped
Green Onion Chopped
Instructions:
- Add olive oil to medium heated pan. Add chop Sausage in 1/4 rounds and brown both sides.
2. Remove Sausage and add mushrooms to the heated pan and brown mushrooms till cooked through.
3. Add Zoodles to the pan and cook for 3-4 minutes- till soft.
4. Add back Sausage to the pan, then the jar of Pasta Sauce, stir to incorporate and allow to simmer for 3-5 minutes, stirring occasionally.
5. Plate and add parmesan cheese, basil or green onion to garnish! Enjoy!!
