Here we are again…talking about one of my favorite kitchen tools…the infamous crock pot! I love this thing! Especially in the Fall and Winter time. I love that I can toss a bunch of stuff in…and a few magical hours later, an amazing and typically frugal meal comes out for my family! I believe that if you have at least 5 good crockpot meals in your back pocket, you are definitely ready to tackle busy school/sports nights! Its wayyyyy easier to have something in the freezer & pantry ready to go…than wondering…what are we going to have for dinner tonight??
The thing I love about White Chicken Chili and Taco Soup is that these are made with items that I usually have in my pantry…and they both take about 10 minutes to toss everything in the magical slow cooker! My go-to recipes have to be easy and available to throw together! I don’t mind cooking more complicated meals, but easy is good when my husband and kiddos are hungry!
Another great thing about both Chicken Chili and Taco Soup is that everyone can personalize their meal and doctor them up however they want to! Its pretty awesome. My son hates cheese right now…so he doesn’t have to put any on his…but my daughter loves it! It works out pretty darn special!
White Chicken Chili
What you need:
4 Chicken Breasts ( just grab them out of the freezer)
2 cans cannelloni Beans
1 can great northern beans
1 can mushrooms
1 can diced green chilis
1 can corn
1 medium chopped onion
3 cups bone broth (recipe here) or chicken broth
1 block of cream cheese
2 tsp. cumin
4 tsp garlic powder
2 tsp salt
Toppings: Cilantro, cheese, chips & sour cream
What to Do:
Grab your crockpot.
Toss all of the ingredients in, starting with the frozen chicken.
Allow to cook for 4 hrs on high
Take out the chicken, dice chicken and return to crock pot.
Stir to combine melted cream cheese.
Enjoy!
