Oh man! It’s almost fall! I can feel it…and when I start seeing all the pumpkin recipes, my cravings for anything with cinnamon or pumpkin go WAY up! I start making things like Pumpkin Muffins and Pumpkin Creamer! School starts the next week for us and I know that I be in full pumpkin force! We also start sports (volleyball and flag football) in a few days and its all of a sudden more difficult to get everyone fed dinner in the time we have! All of a sudden, the lazy days of summer become the busy days of fall.
One of the times that we try to spend as a family for sure is Sunday afternoon. In the fall, we come home from church and usually turn on a football game! Now that my son is old enough to understand what is going on, he is usually the one to tell me what just happened in the play! Heading over to over to Safeway for a quick dinner is a no brainer for me! I get to enjoy a meal with my family without all the work!
This time at Safeway, I grabbed STOUFFER’S® Party Size Macaroni and Cheese and a DIGIORNO® RISING CRUST® Pizza. My family loved them and I loved being with my family instead of being focused on making dinner. Of course, no fall football Sunday dinner would be complete without a fall treat for halftime! One of my new favorite pumpkin treats to make is Pumpkin Pie Cake with Butterscotch and Walnut Topping! This is such an easy treat to prepare! You can throw it together on a and it will be ready for halftime of the big game! This treat is perfect cross between Pumpkin Pie and a Dump Cake! It’s a serious crowd pleaser and you might just have to make it for Thanksgiving (just don’t tell anyone how easy it is!) It has creamy pumpkin pie filling plus a butterscotch crunchy cake topping! Yep, you are going to love this one!
Pumpkin Pie Cake with Butterscotch and Walnut Topping
What you need:
2 16 ounce cans of LIBBY’S® 100% Pure Pumpkin
1 12 Can NESTLÉ® CARNATION® Evaporated Milk
3 Eggs
2 Cups Sugar
1 Tsp. Salt
1 Tsp. Nutmeg
1 TBSP Cinnamon
1 tsp All Spice
1 Yellow Cake Mix
2 cups old-fashioned oatmeal
1 cup melted butter
2 Cups Walnuts or Pecans
2 Cups Butterscotch NESTLÉ® TOLL HOUSE® Morsels
Whipped Cream or Ice Cream for topping
What to do:
Preheat oven to 350 degrees.
Add pumpkin, eggs, evaporated milk, sugar, salt, nutmeg, cinnamon and all spice to bowl. Mix till combined. 2-3 minutes
Grease 9×13 pan.
Pour pumpkin mixture into pan and spread evenly.
Pour yellow cake mix and oatmeal into a bowl and mix.
Sprinkle cake mixture and nuts over pumpkin.
Pour melted butter over dry cake mix and nuts.
Sprinkle Butterscotch morsels on top.
Bake at 350 degrees for 50 minutes.
Allow to cool 15 minutes (will be VERY hot!)
Serve with whipped cream or ice cream.
