One of the things we love to do at our house is watch football. I say “we” because over the first 5 years of my marriage, I asked 5 years of questions and now I LOVE to watch football too! Because I actually enjoy watching the game and I understand what is going on, I like to be out of the kitchen and watching the game with everyone else! Having some food prepared and ready to eat helps me to be able to entertain guests AND get to watch the game too! Enter my Game Day 7 Layer Dip! This recipe is simple to put together the day before and pop it in the oven about 35 minutes before the game starts…and its always a crowd pleaser! You might want to make 2! Another great thing about this recipe is that it transports really well (like it’s not going to spill on the way over to watch the game and you can re-heat it when you get there!).
We were heading over to a friend’s house to watch a football game and I wanted something that I throw together really fast and this bean dip was the perfect thing! I happened to have most of the ingredients in my pantry (because we make mexican food every other day!) and headed to Wal-mart to grab the rest of the ingredients. I love that I can use MorningStar Farms® Chipotle Black Bean Crumbles™ in the same way I would use ground beef. I can just grab them straight out of the freezer, layer them in this recipe and not have to take the time to cook any ground beef, making this recipe even quicker to put together.

Game Day Layer Dip Recipe-
Ingredients:
1 tbsp butter
2 cups Great Value™ Frozen Corn
1 31 oz can of refried beans
2 packets of Taco Seasoning
3 cups MorningStar Farms® Chipotle Black Bean Crumbles™
1/2 cup Black Beans
2 cups Sour Cream
2 chopped Roma Tomatoes
1/2 chopped onion
2 chopped green onion
What to do:
Preheat oven to 350 degrees.
Add 1 tbsp butter and 2 cups frozen corn to hot cast iron pan on medium heat. Stir to coat corn in the melted butter.
Once coated, stop stirring and allow corn to brown for 2-3 minutes. Stir and allow to blacken for 4-5 more minutes. When around half of the corn is blackened, remove pan from heat.
In medium-sized bowl, mix refried beans and 1 packet of taco seasoning. Spread refried beans on the bottom of a 9 x 13 inch pan.
Sprinkle blackened the corn over refried beans.
Next, layer on frozen MorningStar Farms® Chipotle Black Bean Crumbles™ and black beans. I love that you don’t even need to cook these crumbles up! They add the perfect texture to this dip and it’s a great way to keep those Vegolutions that you made on New Year’s Eve! Having a few meals that include more veggies and are easy to throw together is always helpful to any mom!
Mix Sour Cream and Taco Seasoning together in medium-sized bowl. Spread over the rest of the layers.
Sprinkle Cheddar Cheese over all layers evenly.
Next add chopped Tomatoes, Onions, Green Onions ( peppers and olives optional- I didn’t use these because my family doesn’t love olives and peppers as much as I do!). Bake for 35-40 minutes or until cheese is melted.
