Like I have stated many times, I (or I should say we, since the whole Eylander clan is in on this one) LOVE mexican food. Call it mexican, call it american mexican, whatever. If it has salsa and cilantro on it, I’m in.
I’ve been looking for a great mexican rice recipe for a long, long time. Originally, I was looking for one for the stove top and I realized…I AIN’T GOT TIME FOR THAT! I also found my ever so handy rice cooker (that we bought, along with a 25 pound bag of rice when the economy tanked!) So..my search turned to Pinterest for a little inspiration and help! I needed something easy and after trying a few different recipes, I modified this one that worked out with flying colors. Even my picky eater daughter LOVES it! It keeps in the fridge really nicely and makes great left overs so I usually double the recipe if I am making my Mexican Feast for a dinner party. I heart leftovers. Well…I heart not having to cook everyday!
Easy Rice Cooker Mexican Rice
- 1 cup rice (I used long grain rice)
- 2 1/4 cups chicken broth ( I used water this time and it was still delish!)
- 1 (6 ounce) can tomato paste
- 5 tablespoons butter
- 1/2 cup onion, diced small
- 2 garlic clove, minced ( or a few dashes of garlic powder)
- 1(4 ounce) can diced green chilies
- 1 dash pepper & Salt
- 1 TBSP ground cumin ( my favorite mexican spice!)
Optional: cilantro, green onions or chedder cheese on top!
Toss all of the ingredients into your amazing kitchen helper, the rice cooker, and give it a stir. press go and go about your day. When the rice is done, it will need another stir and at any toppings. done. Its so easy, seems like magic!! Set it and forget it!!
