Fall is coming!!! Even though it’s still 89 degrees here in Eastern Washington, I am starting to get a hankering for Fall! I used to mourn the idea of fall…wanting summer to last until forever, but after we moved to eastern Washington (from the Seattle area) I started to really love the seasons…including Fall. I think it’s because I have spent soooo many days in the sun, soaking up tons of vitamin D, that my stores are all up and ready for the change in weather.
One of the meals I love to make in Fall is Crock Pot Taco Soup! It’s a family fave, its super easy and it consists of mostly pantry items that I usually have lying around. It takes about 30 minutes to toss together and even less if you have previously frozen taco meat ( I will tell you more about that later!). This meal is perfect for a huge group (double it!) or family dinner time on a weekday. You can pop everything in the crock pot at the beginning of your day and let it cook while you are at work or running errands.** If you are leaving it in the slow cooker all day, I would recommend cooking it on low. ** I love to toss the ingredients into the slow cooker before going to church on Sunday and when you walk in the door and turn on the football game, it’s all ready to go! Pretty brilliant…HEY! I love to watch the Seahawks…I don’t want to be stuck in the kitchen!
Slow Cooker Taco Soup
What you need:
2.5 Lbs ground beef ( I cook 5lbs of ground beef and freeze the 2nd half for tacos or taco soup later!)
1 onion chopped
Taco seasoning packet ( you can certainly use your own blend if you want to!)
2 cans black beans (or 1 can black beans & 1 pinto beans)
1 can sweet corn
1 small can tomato sauce
1 14 oz can of green enchilada sauce
1 can Rotel
Crock Pot
2 – 3 TBSP Brown Sugar (optional)
Optional Toppings:
Shredded Cheese
Sour Cream
Cilantro
Tortilla Chips
Sriacha
What to do:
Saute chopped onions in large pan over medium heat. 3-5 minutes
Add ground beef and brown over medium heat. 5-10 minutes
While ground beef is browning, drain corn & beans & add to crock pot.
Add tomato, enchilada sauce and rotel to crock pot.
Add Taco Seasoning and 1 can tomato sauce to browned ground beef and stir to combine fully.
Add ground beef mixture to crock pot and stir.
