Easy Baked Meatball Recipe
A while ago I had a hankering for meatballs…something that I’ve never made before…and I found a recipe on Pinterest and after using that recipe, I tweaked it a bit for our family’s tastes! This recipe is so stinking easy! I used to grill my meatballs…and all though they tasted great, they were such as time suck and a total mess!:( So…when I saw that you could BAKE meatballs….I got really, really excited! Now, baking my meatballs is the only way to go!
Ingredients For Easy Baked Meatballs:
2 onions- diced
3 tbsp olive oil
1 lb. ground beef
1 lb. ground pork sausage (I used a flavored sausage this time and loved it! Experiment!)
1/2 cup bread crumbs
1/2 cup grated mozzarella cheese (you could use any cheese that your family likes!)
2 eggs
1 tsp Salt
1 tsp pepper
Parchment paper (makes for VERY easy cleanup)
What to do:
Preheat oven to 350.
Add diced onions and olive oil to cast iron pan on medium heat. This takes at least 45 minutes, so I would recommend trying this the day before or earlier in the day. Its worth it though! Yum!!
In a large bowl add ground beef, sausage, bread crumbs, cheese and eggs. When onions are done grilling, add to mixture.
Mix with hands till just combined. Don’t over mix.
Add 1 layer Parchment over baking sheet
Form 1-2 inch balls by hand and place evenly on baking sheet.
Bake for 20 minutes or until golden brown. You can see why using parchment paper is such a time saver! I love this stuff! I suppose you could use a sil-pat if you wanted to as well!
Check meatballs and let rest for 5 minutes.
