Oh my goodness. I’ve been doing this sugar-free kick for the last 10 days and I’m feeling real groovy. I’ve actually been doing the KETO diet, basically a low carb, mid protein and higher fat diet. I know it absolutely sounds crazy town, but man, I feel amazing. My husband had to actually ask me when I was going to come to bed, since I was on an energy high, purging our closet of 7+ (I lost count) garbage bags of my clothes. I looked at the time and it was 10:30pm! I know it doesn’t seem late, but I’m the lady who has been getting up multiple times a night for the last 8 weeks with little lumberjack! I can’t believe the energy I have had…no NAPS for the last 10 days! Wha???? Crazy!! It’s almost like I’m nesting…but…nope…I have a 2 month old.
Anyway! I have been trying TONS of new ketogenic recipes and I am so excited to share this one with you! I’m so excited for 4 reasons…
- These Garlic Ranch Mushrooms are the jam! I just about ate every single one of them ( don’t worry, I saved a few for my family).
- They are so easy to make. You just can’t mess these ones up. Crockpot + mushrooms, butter and spices and you got this! I also doubled the recipe that I tried and modified it bit because there just wasn’t enough when the mushrooms cooked down. I needed more of the mushroom goodness, and so will you!
- They are delicious left overs too. I had some today in fact! Warm them up in the microwave and you are in for a treat. My 9 yr old and my picky 13 yr old have requested that I make these little gems again!
- These are great for entertaining! These would be a great appetizer or side at a party or dinner. They are easy to get going and just leave them till dinner is ready to go. Pop them in a cute bowl and you are ready to go!
Garlic Ranch Mushrooms
What you need:
4 packages of whole Mushrooms
6 cloves garlic, minced (you could use garlic powder for this if you wanted to)
1 cube butter ( I know it seems like a lot….cuz it is! Just pretend you are french and you will be fine…the french are known for their use of crockpots, right?)
1 package of Ranch Dressing mix
Salt & pepper to taste
What to do:
Pour the mushrooms in the crockpot. Do you see how full this is? It is going to cook WAYYYYYY down!
Toss in the garlic.
Toss in the butter (you could add a step here and melt the butter and pour over the mushrooms if you are going to be gone the whole time of cooking.)
Pour in the Ranch Dressing mix.
Turn crockpot on high and cook for 2 hrs. Stir and cook 1 more hr. This is what it will look like after not touching it for 2 hrs. The mushrooms will leach out a bunch of their liquid and once you give it a good stir, it will coat the mushrooms and they will continue to cook down for the next hr.
