One of the things that I LOVE about using Cast Iron skillets is the fact that they have soooo many uses! I love that you can cook on the stove top and move them right to the oven! Of course you need some extra pot holders, but I love how versatile they are!
One of the things I started cooking when I got my cast iron skillet was frittatas. They are really easy to make, low in sugar and carbs and you can throw just about anything in them! You can really make any variation of this! Do you like Mexican flavors? Toss some taco meat, salsa and cheese…top with cilantro and sour cream! Do you like Denver omelets? Toss in some ham, onions, green peppers and boom! You have a Denver Omelette Frittata! The options are endless!
The other great thing about Frittatas is that you could really eat this for any meal! It’s a great breakfast for dinner, it’s a easy breakfast or brunch or even lunch! I ate it for lunch today, in fact!
I’m super lucky because my 9 yr old son is a very adventurous eater and he ate this after school for an after school snack! I love that I can just warm it up in the microwave and its ready to go!
